Yellow Cupcakes with Chocolate Frosting
This yellow cake is in my “ring” recipes as well as the frosting. I really think that the frosting for these need to be a little bit darker like Martha Stewart’s chocolate frosting recipe. So I added that to the back of the card and next time I will use that with the cupcakes. These cupcakes were leftover batter from MJ’s B-day cake, so I froze them and they are really quite good, even after being in the freezer for a while. To pipe these I used one of my large open tips, aboutt a ½ inch across, then piped straight down and drug the icing tip for just a sec and then lifted up. The tops turned out real pretty. I had some leftover melted chocolate I had spread very thinly on wax paper, and let dry, and then rolled up and froze. This technique is in my travel cookbook under cakes. Very handy to have.
